Hands up if you are a tiny little bit fed up of the Instagram sensation that is avocado toast.. Well, if you have your hands up right now then this pea toast is for you. If not then you are totally allowed to still love avocado on toast.

But you have GOT to try this toast too because it is really, really, really good. Trust me, I know this. It is like lush creamed peas on toast, only without the cream as the plain old peas are perfectly creamy. This means it is suitable for vegans, veggie lovers and well honestly, everyone.

Ok, so what if I have eaten a million different variations of peas on toast for at least one meal a day last week. All in the name of research for you guys. I think my favourite version so far is this simply topped with toasted sesame seeds and roasted chopped up pistachio nuts.  It may not be one of the champagne breakfast ideas that I had planned to develop but it is so good that I don’t mind the deviation.

Talking about brunches, I recently went to one of the best ones ever. It was brilliant because it was casual, the sun was out, the kids had their own play corner – with a trampoline, swings of old oak trees, colourful picnic mats dotted around, a sandpit, a gazillion garden games a lovely balloon animal lady and a few packs of the childhood favourite face paints (with glitter, peeps, with glitter) placed out in a few strategic spots.

What’s more the hosts had hired in another sweet lady to oversee all the children. She even consented to half wearing a spider man outfit to be happily chased around by all the kids. This meant I saw my children once though the brunch as they were too busy having fun making new friends and face painting well, their entire body along with catching Spiderwoman. It was all good.

But what made it brilliant for me was the simplicity of the set up for us the parents.

A long plank over 2 barrels, was loaded with a selection of juices, water, chopped up fruit, ice cubes and colour straws on one side. Then simple foods, aka bagels, a few dips including cream cheese, hummus, olives and more fruit.

So, from a hosting point of view there was less time spent cooking, setting up and planning the food aspect and more time having fun. As a guest, it felt like a lot of effort had been made for me and my kiddoes, with a whole lot of food choices and the added excitement that I could mix and match my food.  Plus, I had some time to have grown up conversations with zero interruptions. Guys, it really was the best brunch I have ever been to. Bonus is now I have plenty of ideas I can use to host the perfect brunch. Yes, I always have my blogger and foodie hat on when I go out.

Peas on toast with sesame seeds and pistachios

Peas on toast with sesame seeds and pistachios

Ingredients

  • 125 ml (0.5 cup) of water
  • 250 g (8.8oz) frozen peas
  • Small handful of roughly chopped parsley
  • 1 tbsp olive oil
  • 1 tbsp lemon juice or to taste
  • Salt
  • 4 thick slices of bread toasted
  • 3 tbsp toasted sesame seeds
  • 3 tbsp chopped pistachio nuts
  • Extras for topping tomatoes and cress olive oil for drizzling

Instructions

Make the pea paste

  • Add the water to a pot along with the peas and cook for about 2.5 min until the peas are soft.
  • Reserve 1 tbps of the cooking water, discard the rest and let the peas cool slightly.
  • Transfer the peas into a food processor along with the reserved liquid and the parsley and whiz into a rough paste.
  • Transfer the pea paste into a bowl and mix in the olive oil and lemon juice and season to taste.

Make the peas on toast:

  • Assemble the peas on toast, starting with the bread, then the peas paste, then the sesame seeds and nuts, any extras and a drizzle of olive oil.

    Wow, this looks so bright and delicious, I will try this soon. Do you think that instead of all the parsley, 50% mint could be used? Peas and mint are supposed to be a great combination.

    I love avo toast, but if I see another avocado rose I’m going to lose my mind. Why with the rose?! I love the idea of these peas on toast, and peas are packed with protein as well so this is totally super food toast! Going to pin this and have toast for dinner!
